Italian Soup

Jason and I had dinner with our friends Amanda and RJ and they made us the BEST soup. It's my new favorite. I got the recipe from Amanda and made it tonight for dinner. Absolutely delish. It's super easy and now a family favorite.

Ingredients:

1lb ground Italian sausage ( I use the spicy sausage)
2 cups of onion, chopped
1 cup carrot, diced
2 T. garlic, minced

4 cups of chicken broth
1 can chopped Italian style stewed tomatoes
1 cup of pasta (really any type is fine)
2 cups fresh spinach, chopped (I don't chop it, just throw it in)

Parmesan cheese

Preparation:

Brown the sausage in a large saucepan (just use your large pot, it is great because it is a one pot dish), over medium high heat. Add onion and carrot and saute for 3 mins. Stir in garlic and saute another 3 mins.

Add the broth and tomatoes, bring to a boil. Stir in the pasta and let it cook according to package directions (about ten mins). Add the spinach and cook about 1 min until wilted.

Serve by placing parmesan cheese over the soup.

I just stumbled across this article which talks about Sears' current interest in buying out J.Crew. The thought of this makes me want to throw-up. I hate Sears more then a fat kid hates vegetables. Please J.Crew, forget about the $3 billion dollar offer and don't sell out!

Lucille 2

So remember how Buster was dating Lucille 2 and she had vertigo? I KNOW HOW SHE FEELS! I woke up this morning with a stiff neck and a serious case of the dizzy spells. I thought it was something only old people got? Ughhhhhhh. The room is spinning and I cant walk without holding on to stuff.

Any of you experience the same thing? I am going to the chiropractor in the morning hoping he can adjust me back to normal. But if you have any further advice of how to make this crap go away I would love to know!

My chicken nugget

No words can express the amount of heartache I feel when I think about this little girl below. I thought that it wouldn't be too hard leaving Utah (and her) and starting a new life here in Washington. This my friends is not the case. I was with Danni since the very beginning. Literally. I was in the delivery room when she was born and was with her every day since for 3 and a half years. This child stole my heart. Don't get me wrong I miss the other 4 kids dearly, but the special relationship I had with Danni is something so unique, precious and irreplaceable. I get teary eyed now when I think of her and sometimes its a struggle to hold back my tears. Not a day goes by that I don't think of little Danni. Luckily we're able to video chat via the 4G iphone :) (Thanks Jason and Bunney for having awesome phones) My heart fills with joy when I hear her voice and see that cute little face!

Let me tell you, being a nanny may be one of the most rewarding jobs but be fore warned, it will tare your heart out come the day you have to move away and say goodbye.

Manito Gardens

Friday night was date night! Jason and I along with some friends we've made here in Spokane went and enjoyed the Manito Garden light show. It was pretty much a green house with lights draped around the plants. ha. It was a little silly but hey, we're still figuring out things to do here in Washington. We ended up having a great time with great company!

Could you do it?

Could you cut your own arm off to survive? I've given this lots of thought and sadly I've concluded I could not. I'm a wimp. I might attempt but could never follow through.

However Aron Ralston did. This movie was beautiful. I was in awe by this man and the courage he had to survive. It you haven't seen it I suggest you do!
